Of course, there are some things in the kitchen that you actually need to have good knives for. It’s about more than just making your life easier, it’s about the fact that the task requires a very specific tool. And one of those things is slicing sashimi. It’s not something that everybody does every day, but if you do work with sushi and sashimi specifically, you’re going to want a special sashimi knife.

So, before you start shopping, allow us to tell you a little bit about Damascus steel and why we think the Damascus sashimi knife is an absolute must.
What is Damascus Steel?
Even if you don’t know exactly what it is, you may have heard of Damascus steel – it’s fairly well renowned, known for its strength and durability. But what is it?
Modern Damascus steel is made by means of a process called pattern welding, whereby many different types of metal of layered upon one another and bound by means of heat treatments. Then, the blade is carved out from the solid block of metal.
Blades made from Damascus steel are know for being strong and durable, but also very sharp and with excellent edge retention – that is, they stay sharp for longer.
But where does Damascus steel and the method of pattern welding come from?
Damascus steel was a popular material for knife blades and even swords in ancient Syria up until the 1700s. At some point during the 18th century, the exact method of producing Damascus steel was lost and only the actual blades remained.
Thus, in the 19th century, blacksmiths and other experts attempt to recreate these blades, and that’s when they came up with pattern welding. So, because original Damascus steel doesn’t exist at all anymore, we refer to blades made by means of pattern welding as Damascus steel blades.
Why You Should Have a Damascus Sashimi Knife?
Now, as we mentioned earlier, Damascus steel is known for its strength and resilience, but what makes it so good for sashimi knives in particular?
Well, first, there’s the general aspect – Damascus steel is just a good, durable blade material.
But the most important quality that makes it ideal for sashimi knives is its sharpness and edge retention. Sashimi knives are required to cut super precise, clean slices of delicate fish, and to do that, your knife needs to be extra sharp. And, there’s nothing better than a Damascus sashimi knife to do the job.
