Carbon Steel Kitchen Knives
Most different types of steel knives have at least some carbon and iron content – however, carbon steel knives contain a bit more carbon than ordinary steel knives.
Carbon is great because it provides strength and sharpness. So, a carbon steel kitchen knife is pretty strong and can be quite sharp – indeed, it has more than carbon than your ordinary knife, but it doesn’t have super high carbon content.
High-Carbon Steel Kitchen Knives
Now, high-carbon knives have significantly more carbon content than your ordinary steel – or even carbon steel – knife. Hence, why we made a point about carbon steel knives having more carbon than normal knives, but not having an extraordinarily high carbon content.
High-carbon knives have almost double the carbon of carbon knives, making them significantly stronger and sharper. They also offer great excellent edge retention, so they don’t need to be sharpened as often.
On the down side, however, they do tend to be more susceptible to rust and corrosion, so they require a bit more care and maintenance – especially when it comes to drying them properly after washing.
Stainless-Steel Kitchen Knives
Stainless-steel, on the other hand, isn’t quite as strong as carbon or high-carbon steel, but it is less likely to corrode and rust. It also doesn’t stain as badly, making it potentially more attractive and aesthetically pleasing in the long run.
