Not everything you make is going to be fresh vegetables, sometimes you have to use frozen ingredients. This Xinzuo frozen food knife is designed to handle the extra stress that cutting frozen food puts on a knife.
In order to handle the task, the blade is made from German Din 1.4116 Stainless Steel. This provides a sharp, durable edge with lower carbon content.
The blade is heat treated to a hardness of 56-58 HRC on the Rockwell scale. This is on the softer side of steel harnesses but it is done for a reason. Combined with the lower carbon content, a softer heat treatment creates a more durable blade.
Unlike normal knives that will be used on room-temperature or warmer materials, a frozen food knife has to deal with food that is more dense. In order to preserve the edge, a moderately less hard edge combined with serrations will be able to hold up to the abuse better.
The 7.8 inch blade features a relatively pronounced curve to emphasize the sawing cuts this knife was designed for. Using a sawing technique will make quick work of frozen food. This includes meat, frozen bread, and frozen vegetables.
