Whetstones are one of the more preferred sharpening methods for kitchen knives. This technique goes back hundreds of years and is deeply tied to both Western and Japanese knife practices.
Maintaining the edges of your knives makes it easier to process food and to cut through materials. A whet stone is one of best options for producing consistent, sharp edges. This example is made of white corundum.
It features two different sides: a Blue 1000 grit side and a White 6000 grit side. The course 1000 grit is used to prepare and sharpen the blade quickly while the finer 6000 grit is used to polish the edge. Polishing the edge smooths over the various imperfections in the blade leftover from sharpening it.
To make this all easier a bamboo holder is included. The holder has a rubber base to keep it from slipping around on your countertop and it has an internal rubber insert to rest the whetstone on. This secures the stone in the holder while keeping the side you are using accessible.
An edge angle guide is included so you can maintain the proper edge angle of your knife. This ensures that you do not accidentally blunt the knife and destroy the edge angle.
To use the whet stone, soak the stone in water for 5 minutes or when the bubbles stop, then put it in the holder and begin sharpening using the coarse grit. Sharpen gently and then switch to the finer grit to polish the edge. The whole process should take around 15 minutes.
